Ingredients
250g strawberries, diced
50g caster sugar
10g cornstarch
1/2 teaspoon lemon juice
Method
Combine strawberries, sugar and lemon juice in a saucepan. Place over medium heat and cook until the strawberries soften. Add the cornstarch and stir, continue to cook until the mixutre boils and thickens. Remove from heat and let cool in the fridge (mixture will thicken some more).
This is perfect for the inside of your macarons.
